Ingredients
  

1 lb boneless, skinless chicken breasts

1/2 cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 ripe avocado, sliced

1 small red onion, thinly sliced

1 cup fresh cilantro, chopped

4 large flour tortillas

Lime wedges, for serving

Salt and pepper to taste

Optional: hot sauce for extra kick

Marinate the Chicken: In a bowl, add the chicken breasts and pour in half of the chipotle ranch dressing. Season with salt and pepper. Cover and let it marinate for at least 30 minutes or up to overnight in the refrigerator.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F). Remove from the grill and let it rest for 5 minutes, then slice it into strips.

      Prepare the Burrito Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, and remaining chipotle ranch dressing. Stir until everything is well mixed.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. Start by adding a generous scoop of the rice and bean mixture in the center, then layer with sliced grilled chicken, shredded cheese, avocado, red onion, and cilantro.

          Wrap the Burritos: Fold in the sides of the tortilla and then roll it tightly from the bottom up, securing all the fillings inside. Repeat this process with the remaining tortillas.

            Toast the Burritos (optional): For a crispy exterior, place the assembled burritos seam-side down on a lightly oiled skillet over medium heat. Cook for about 2-3 minutes on each side until golden brown.

              Serve: Slice the burritos in half, serve with lime wedges on the side, and drizzle with extra chipotle ranch dressing or hot sauce if desired.
