1 lb chicken breasts, boneless and skinless

1/4 cup chipotle ranch dressing (store-bought or homemade)

1 tsp garlic powder

1 tsp paprika

1/2 tsp cumin

Salt and pepper to taste

4 large flour tortillas

1 cup shredded cheese (cheddar or a blend)

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1/2 cup corn (canned or frozen)

1 medium avocado, sliced

1 cup fresh lettuce, chopped

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken breasts with the chipotle ranch dressing, garlic powder, paprika, cumin, salt, and pepper. Allow the chicken to marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill it for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and juices run clear. Let the chicken rest for a few minutes before slicing it into strips.

      Prepare the Burritos: Lay out a large flour tortilla on a flat surface. In the center, layer a portion of the cooked rice, black beans, corn, sliced grilled chicken, shredded cheese, avocado, and chopped lettuce.

        Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling entirely. Repeat this process for the remaining tortillas.

          Heat the Burritos: Optional – For extra warmth and a crispy exterior, return the wrapped burritos to the grill (or a skillet) and cook them for 2-3 minutes on each side until golden brown and heated through.

            Serve: Cut the burritos in half and garnish with fresh cilantro if desired. Serve with extra chipotle ranch dressing on the side for dipping.
