Easy Cowboy Butter Chicken Linguine

12 oz linguine pasta

2 tablespoons unsalted butter

1 tablespoon olive oil

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon chili flakes (optional for heat)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup sweet corn (frozen or fresh)

½ cup heavy cream

1 tablespoon lemon juice

Fresh cilantro, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the butter and olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, smoked paprika, oregano, cumin, and chili flakes (if using). Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
