4 slices of thick bread (like brioche or challah)

2 large eggs

1 cup milk (whole or almond)

1 tsp vanilla extract

1/2 tsp ground cinnamon

2 tbsp butter (for cooking)

1/4 cup brown sugar (for caramelizing)

Fresh fruit (like bananas or strawberries) for topping

Maple syrup (optional)

Instructions
 

Prepare the custard mixture: In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.

    Soak the bread: Dip each slice of bread into the custard mixture, allowing it to soak for about 30 seconds on each side. Make sure the bread is well-coated.

      Melt the butter: In a skillet or griddle set over medium heat, melt 1 tablespoon of butter.

        Cook the French toast: Add the soaked bread slices to the skillet. Cook for about 3-4 minutes on each side, or until golden brown. Remove from the skillet and keep warm.

          Caramelize the sugar: In the same skillet, add the remaining tablespoon of butter and 1/4 cup of brown sugar. Stir continuously on medium-low heat until the sugar dissolves and starts bubbling.

            Add the French toast back in: Once it’s caramelized, place the cooked French toast back into the skillet, coating both sides in the caramel sauce. Cook for an additional 1-2 minutes per side, ensuring they’re covered in the caramel.
