Ingredients
  

1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon sesame oil

2 teaspoons garlic, minced

1 teaspoon ginger, minced

1 tablespoon lime juice

1 teaspoon red chili flakes (optional, for spice)

1 cup peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce (for sauce)

1 tablespoon lime juice (for sauce)

1 tablespoon honey (for sauce)

Chopped fresh cilantro, for garnish

Lime wedges, for serving

Skewers (soaked in water if wooden)

Instructions
 

In a large bowl, combine the soy sauce, fish sauce, brown sugar, sesame oil, garlic, ginger, lime juice, and red chili flakes. Stir well until the sugar is dissolved.

    Add the cubed chicken to the marinade, coating well. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

      While the chicken marinates, prepare the peanut sauce. In a saucepan over low heat, combine the peanut butter, coconut milk, soy sauce, lime juice, and honey. Stir until smooth and warm through, then set aside.

        Preheat your grill or grill pan over medium-high heat.

          Thread the marinated chicken onto the skewers, ensuring they are evenly spaced.

            Grill the skewers for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks.
