Ingredients

8 oz whole grain or gluten-free pasta (spaghetti or penne)

2 cups broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup grated Parmesan cheese (optional)

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. About 2 minutes before the pasta is done, add the broccoli florets to the pot. Once cooked, reserve a cup of pasta water, then drain the pasta and broccoli together in a colander.

In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant but not browned.

Return the drained pasta and broccoli to the pot. Toss to combine with the garlic oil, adding reserved pasta water a little at a time to create a light sauce. Season with salt and pepper to taste.

Remove from heat, then stir in the lemon juice and Parmesan cheese (if using) until well combined.

Serve warm, garnished with fresh parsley and an extra sprinkle of Parmesan cheese, if desired.
