Ingredients

3 medium potatoes, diced (red or Yukon gold for best results)

1 small onion, chopped

1 bell pepper (any color), chopped

1 cup cooked breakfast sausage, crumbled (or diced bacon)

4 large eggs

1 cup shredded cheese (cheddar or a cheese blend)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or green onions, chopped (for garnish)

Instructions

Prepare the Potatoes: In a medium pot, boil the diced potatoes in salted water until just tender, about 5-7 minutes. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the onion and bell pepper, cooking until soft, about 3-4 minutes.

Combine Ingredients: Add the pre-cooked potatoes to the skillet, along with the cooked breakfast sausage. Stir in the smoked paprika, garlic powder, salt, and pepper. Cook for another 5-7 minutes, allowing the potatoes to crisp up and the flavors to meld together.

Cook the Eggs: Create small wells in the hash and crack an egg into each well (up to 4 eggs). Cover the skillet with a lid and cook until the eggs are set to your liking, about 5-8 minutes.

Add Cheese: Once the eggs are cooked, sprinkle the cheese evenly over the hash. Cover the skillet for an additional 1-2 minutes, allowing the cheese to melt.

Garnish and Serve: Remove from heat, garnish with fresh parsley or green onions, and serve immediately.
