Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 egg, beaten

2 cups marinara sauce

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg

Fresh basil for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Boil a large pot of salted water and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan cheese, beaten egg, minced garlic, salt, black pepper, and nutmeg. Mix until well combined.

        Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.

          Carefully stuff each pasta shell with the spinach and ricotta mixture. Arrange the stuffed shells over the marinara sauce in the baking dish.

            Pour the remaining marinara sauce over the stuffed shells and sprinkle shredded mozzarella cheese on top.

              Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired and serve hot.
