12 oz (340g) pasta (penne or fettuccine)

1 lb (450g) chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup spinach (fresh or frozen)

1 cup heavy cream

1/2 cup chicken broth

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken pieces. Season with salt and pepper. Cook for about 5-7 minutes or until fully cooked and golden brown, stirring frequently. Remove chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Add Sun-Dried Tomatoes and Spinach: Stir in the sun-dried tomatoes and spinach. If using frozen spinach, ensure it is fully thawed and drained; cook for 2-3 minutes until the spinach wilts.

          Make the Sauce: Pour in the heavy cream and chicken broth, then add the Italian seasoning and red pepper flakes (if using). Stir to combine and bring the mixture to a gentle simmer for about 5 minutes.

            Combine Ingredients: Return the cooked chicken to the skillet, then add in the pasta. Toss everything together until the pasta is evenly coated with the sauce. If the sauce is too thick, add a little reserved pasta water to loosen it up.
