Ingredients

4 ripe bananas

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup milk

1 large egg

1/4 cup sugar (for frying)

Vegetable oil (for frying)

1/2 cup unsalted butter

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon (for sauce)

A pinch of salt

Instructions

Prepare the Bananas: Peel the bananas and slice them gently into thick slices, about 1 to 1.5 inches thick. Set them aside.

Make the Batter: In a mixing bowl, combine the flour, baking powder, salt, and cinnamon. In another bowl, whisk together the milk and egg until well combined. Pour the wet ingredients into the dry ingredients and stir until you have a smooth batter.

Heat the Oil: In a deep skillet or frying pan, add enough vegetable oil for frying (about 1-2 inches deep) and heat over medium heat until hot, but not smoking.

Fry the Bananas: Dip each banana slice into the batter, allowing the excess to drip off. Carefully drop them into the hot oil, frying a few at a time to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and place on a plate lined with paper towels to absorb excess oil.

Make the Cinnamon Butter Sauce: In a small saucepan over medium heat, melt the butter. Once melted, stir in the brown sugar, vanilla extract, cinnamon, and a pinch of salt. Cook for 2-3 minutes until the sauce is slightly thickened and bubbly.

Serve: Arrange the fried bananas on a serving plate, drizzle generously with the cinnamon butter sauce, and sprinkle a little extra cinnamon on top if desired. Enjoy warm!
