Fruit Salsa with Cinnamon Chips

Ingredients
  

For the Fruit Salsa:

1 cup fresh pineapple, diced

1 cup ripe strawberries, hulled and chopped

1 cup kiwi, peeled and diced

1 cup mango, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (optional)

Salt to taste

For the Cinnamon Chips:

4 medium-sized flour tortillas

1/4 cup unsalted butter, melted

1/4 cup sugar

1 teaspoon ground cinnamon

Instructions
 

Prepare the Fruit Salsa:

    - In a large mixing bowl, combine the diced pineapple, strawberries, kiwi, and mango.

      - Add the finely chopped red onion and fresh cilantro to the bowl.

        - Squeeze the lime juice over the fruit mixture, and gently stir to combine.

          - If desired, drizzle with honey for added sweetness and season with a pinch of salt to enhance the flavors. Mix gently yet thoroughly.

            - Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

              Make the Cinnamon Chips:

                - Preheat your oven to 350°F (175°C).

                  - In a small bowl, mix together the sugar and ground cinnamon. Set aside.

                    - Brush one side of each tortilla with melted butter, then sprinkle with the cinnamon-sugar mixture.

                      - Cut each tortilla into triangles (like pizza slices) and place them on a baking sheet, cinnamon side up.

                        - Bake in the preheated oven for about 10-12 minutes, or until the chips are crispy and golden brown.

                          - Remove from the oven and let them cool for a few minutes.

                            Serve:

                              - Transfer the chilled fruit salsa to a serving bowl and serve alongside the crispy cinnamon chips for dipping.
