Ingredients

1.5 lbs chicken breast, cut into bite-sized pieces

4 tbsp unsalted butter

5 cloves garlic, minced

1 tsp dried thyme (or 1 tbsp fresh thyme, chopped)

1 tsp smoked paprika

Salt and pepper, to taste

1/4 cup chicken broth

2 tbsp fresh parsley, chopped (for garnish)

Lemon wedges, for serving (optional)

Instructions

Prep the chicken: In a mixing bowl, season the chicken pieces with salt, pepper, and smoked paprika. Make sure the chicken is evenly coated.

Heat the skillet: In a large skillet, melt 2 tablespoons of butter over medium-high heat.

Cook the chicken: Add the chicken pieces to the skillet in a single layer. Cook for about 5-7 minutes, or until golden brown and cooked through. You may need to do this in batches to avoid overcrowding the pan. Once cooked, remove the chicken from the skillet and set aside.

Sauté garlic: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute, or until the garlic is fragrant and lightly golden, being careful not to burn it.

Add flavor: Pour in the chicken broth and thyme, scraping the bottom of the skillet to deglaze any flavorful bits stuck to the pan. Let it simmer for 2-3 minutes to reduce slightly.

Combine: Return the cooked chicken to the skillet and stir to coat in the garlic butter sauce. Cook for an additional 2-3 minutes to ensure everything is well combined and heated through.

Garnish and serve: Remove from heat, sprinkle with fresh parsley, and serve hot. You can also add lemon wedges on the side for an extra zing.
