Garlic Butter Steak and Potatoes Skillet

Ingredients
  

1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10 minutes until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the steak pieces, seasoning them with salt and pepper. Sear them for about 3-4 minutes until browned on all sides. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the cooked potatoes. Sear the potatoes for 5-7 minutes, stirring occasionally until golden brown and crispy.

        Add Garlic and Herbs: Reduce the heat to medium and add the minced garlic, rosemary, and thyme to the potatoes. Sauté for about 1-2 minutes until fragrant.

          Combine Steak and Finish: Return the seared steak back to the skillet with the potatoes. Toss everything together and cook for an additional 2-3 minutes to heat through and allow flavors to meld. Adjust seasoning with more salt and pepper if needed.

            Serve: Garnish with freshly chopped parsley if desired, and serve warm right from the skillet.
