2 ribeye steaks (1 inch thick)

4 medium-sized Yukon Gold potatoes, diced

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the diced potatoes and cover with water. Add a generous pinch of salt. Bring to a boil and cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Season the Steaks: Pat the ribeye steaks dry with paper towels. Season generously with salt and black pepper on both sides.

      Sear the Steaks: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare or until cooked to your desired doneness. Remove steaks from the skillet and let them rest on a plate.

        Cook the Potatoes: In the same skillet (lower the heat to medium), add the drained potatoes. Cook for about 5 minutes until they start to brown, stirring occasionally.

          Make the Garlic Butter: Push the potatoes to one side of the skillet. In the empty side, add the butter, minced garlic, rosemary, and thyme. Let the butter melt and infuse with the herbs for about 1 minute, then mix it with the potatoes. Season with more salt and pepper to taste.
