Garlic Butter Steak Bites and Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

Salt and black pepper, to taste

For the Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, paprika, salt, and pepper until evenly coated.

        - Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden and tender, tossing halfway through for even cooking.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the steak cubes generously with salt and black pepper.

              - In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the steak bites in a single layer (you may need to do this in batches) and sear them for about 2-3 minutes on each side for medium-rare, checking for your preferred doneness.

                - Remove the steak bites from the skillet and set aside on a plate.

                  Make the Garlic Butter Sauce:

                    - In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant (be careful not to burn the garlic).

                      - Stir in the chopped thyme and rosemary.

                        Combine and Serve:

                          - Add the cooked steak bites back into the skillet with the garlic butter sauce. Toss to coat the steak bites evenly.

                            - Serve the steak bites next to the roasted potatoes. Drizzle any remaining garlic butter from the skillet over the top and garnish with fresh parsley.
