Garlic Butter Steak Bites and Potatoes

1.5 lbs sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the potatoes: In a large bowl, toss the halved baby potatoes with olive oil, salt, black pepper, and half the minced garlic. Spread them out evenly on a baking sheet and roast for about 25-30 minutes, or until they're golden brown and tender, stirring halfway through.

      Season the steak bites: While the potatoes are roasting, pat the steak cubes dry with paper towels and season generously with salt and black pepper.

        Cook the steak bites: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once melted, add the seasoned steak bites in a single layer (work in batches if necessary to avoid overcrowding). Sear for about 2-3 minutes on each side until they form a nice crust and reach your desired doneness. Remove from the skillet and set aside.

          Prepare the garlic butter: In the same skillet, add the remaining 2 tablespoons of butter along with the remaining minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until the garlic is fragrant but not burned.

            Combine and serve: Return the steak bites to the skillet and toss to coat them in the garlic butter mixture. Cook for an additional minute to heat through.

              Plate and garnish: Serve the garlic butter steak bites alongside the roasted potatoes. Garnish with fresh parsley for an added touch of color and flavor.
