1 lb baby potatoes, halved

2 large carrots, sliced into 1/4-inch rounds

2 medium zucchinis, sliced into half-moons

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the halved baby potatoes, sliced carrots, and zucchini.

      In a small bowl, whisk together the olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper.

        Pour the herb mixture over the vegetables and toss until everything is well coated.

          Spread the vegetables evenly on the prepared baking sheet in a single layer.

            Roast in the oven for about 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through to ensure even cooking.

              Once done, remove from oven and let cool for a few minutes.

                Garnish with fresh parsley before serving.
