For the Chicken Marinade:

500g (1 lb) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

4 garlic cloves, minced

1 tablespoon fresh ginger, minced

2 teaspoons garam masala

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon chili powder

Salt to taste

For the Tikka Masala Sauce:

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

4 garlic cloves, minced

1 tablespoon fresh ginger, minced

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

1 teaspoon turmeric

1 teaspoon chili powder (adjust to taste)

400g (14 oz) can crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine yogurt, lemon juice, minced garlic, ginger, garam masala, cumin, paprika, turmeric, chili powder, and salt. Mix well. Add the chicken pieces, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Cook the Chicken: Preheat your oven to 200°C (390°F). Spread the marinated chicken on a baking tray and roast for about 20 minutes or until cooked through. Alternatively, you can grill the chicken on a barbecue or stovetop grill until slightly charred and cooked through.

      Prepare the Tikka Masala Sauce: In a large skillet or pot, heat vegetable oil or ghee over medium heat. Add chopped onions and sauté until golden brown. Stir in minced garlic, ginger, and cumin seeds; cook for 1-2 minutes until fragrant.

        Add Spices: Sprinkle in the coriander powder, garam masala, turmeric, and chili powder. Stir to combine and cook for another minute.

          Create the Sauce: Pour in the crushed tomatoes, stirring well. Lower the heat and let this simmer for about 15-20 minutes until the sauce thickens and the flavors meld together. Stir occasionally.

            Finish the Dish: Reduce heat to low, stir in the heavy cream, and add the cooked chicken pieces to the sauce. Simmer for an additional 5 minutes, allowing everything to heat through and blend well. Adjust salt to taste.
