1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons oil

4 cloves garlic, minced

1 tablespoon ginger, finely grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon turmeric powder

1 teaspoon garam masala

1 teaspoon cayenne pepper (adjust for spice level)

Salt to taste

For the Tikka Masala Sauce:

2 tablespoons oil or ghee

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon ginger, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon paprika

1 teaspoon garam masala

1 can (15 oz) crushed tomatoes

1 cup coconut milk or heavy cream

Fresh cilantro for garnish

Salt and pepper to taste

Marinate the Chicken: In a large mixing bowl, combine yogurt, lemon juice, oil, garlic, ginger, ground cumin, ground coriander, turmeric, garam masala, cayenne pepper, and salt. Add chicken pieces, ensuring they're well coated. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off. Grill or sauté the chicken in batches for about 5-7 minutes until cooked through and slightly charred. Set aside.

      Prepare the Sauce: In a large pan, heat oil or ghee over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in garlic and ginger, cooking for another minute.

        Add Spices: Mix in ground cumin, ground coriander, paprika, and garam masala, cooking until fragrant (about 30 seconds).

          Simmer the Tomatoes: Pour in the crushed tomatoes and bring the mixture to a boil. Reduce heat and let it simmer for about 10 minutes, stirring occasionally until it thickens.

            Create the Sauce: Stir in the coconut milk or heavy cream, and season with salt and pepper. Let it simmer for another 5 minutes.

              Combine Chicken with Sauce: Add the grilled chicken pieces to the sauce, stirring well to combine. Allow to simmer for another 5-10 minutes to blend the flavors.

                Garnish and Serve: Remove from heat, then garnish with fresh cilantro. Serve hot with basmati rice or naan.
