4 ears of fresh corn, husked

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled Cotija cheese (or Feta cheese as a substitute)

1-2 teaspoons chili powder (adjust to taste)

1 teaspoon smoked paprika

1 lime, juiced (plus extra wedges for serving)

2 tablespoons chopped fresh cilantro (optional)

Salt and black pepper to taste

Olive oil for grilling

Prepare the Corn: Preheat your grill to medium-high heat. Husk the corn and remove all silk.
