Ingredients

1 pound ground beef

4 medium potatoes, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 cup beef broth

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Vegetables: Start by washing and dicing the potatoes into small cubes. Finely chop the onion and bell pepper, and mince the garlic.

Cook the Ground Beef: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the ground beef. Cook until browned, breaking it apart with a spatula, approximately 5-7 minutes. Season with salt and pepper.

Sauté the Aromatics: Push the beef to one side of the skillet, and add the onions, garlic, and bell peppers to the empty side. Sauté for about 3-4 minutes, until they become soft and fragrant.

Combine Ingredients: Mix the vegetables with the beef in the skillet. Add the diced potatoes, smoked paprika, oregano, and cumin. Stir everything together to ensure the spices are evenly distributed.

Add the Broth: Pour in the beef broth and bring the mixture to a simmer. Cover the skillet and reduce the heat to medium-low. Allow it to cook for about 20-25 minutes, or until the potatoes are tender and the beef is cooked through. Stir occasionally to prevent sticking.

Final Adjustments: Taste and adjust seasoning with additional salt, pepper, or spices as necessary.

Serve: Once everything is cooked, remove from heat and let it sit for a few minutes. Serve the mixture hot, garnished with fresh chopped parsley on top.
