1 pound ground beef (preferably lean)

1 medium zucchini, diced

1 medium sweet potato, peeled and diced

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup beef broth (or water)

Fresh parsley, chopped (for garnish)

Prepare Ingredients: Start by washing and dicing the sweet potato, zucchini, onion, and bell pepper as instructed.

    Cook the Beef: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the ground beef. Season with salt, pepper, and smoked paprika. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

      Sauté Vegetables: Push the beef to one side of the skillet. In the cleared space, add the remaining tablespoon of olive oil. Add the chopped onion, garlic, and bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes.

        Add Sweet Potato: Stir in the diced sweet potato. Pour in the beef broth (or water) and cover the skillet. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.

          Incorporate Zucchini: Add the diced zucchini and Italian seasoning to the skillet. Cook for an additional 5-7 minutes, allowing the zucchini to soften while stirring everything together. Adjust seasoning with more salt and pepper if desired.

            Serve & Garnish: Once everything is well-cooked and combined, remove from heat. Garnish with fresh chopped parsley and serve hot!
