1 lb ground beef (lean)

2 medium zucchinis, diced

1 medium sweet potato, peeled and diced

1 small onion, chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 tsp smoked paprika

1 tsp cumin

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped for garnish

Instructions
 

Prep the Vegetables: Start by washing and peeling the sweet potato. Dice it into small cubes, approximately ½ inch. Dice the zucchinis, chop the onion, and dice the bell pepper. Set aside.

    Cook the Sweet Potato: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potato and sauté for about 5-7 minutes, stirring occasionally, until they start to soften.

      Add Ground Beef: Push the sweet potato to one side of the skillet and add the remaining tablespoon of olive oil. Add the ground beef to the skillet and cook until browned. Use a spatula to break it up into smaller pieces. Season with salt, pepper, smoked paprika, and cumin.

        Incorporate the Aromatics: Once the beef is no longer pink, add the chopped onion and minced garlic. Cook for about 2-3 minutes until the onion is translucent and fragrant.

          Add Remaining Vegetables: Stir in the diced zucchini and bell pepper to the skillet and mix everything well. Cook for an additional 5-7 minutes, or until the zucchini is tender and the sweet potato is fully cooked.
