1 lb ground turkey

2 large sweet potatoes, peeled and cubed

1 medium onion, diced

2 cloves garlic, minced

1 cup spinach, chopped (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded mozzarella cheese

1/4 cup Greek yogurt (optional, for creaminess)

2 tbsp olive oil

1/4 cup chopped fresh cilantro (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and boil for about 15 minutes, or until fork-tender. Drain and set aside.

      Sauté the Turkey and Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3–4 minutes. Add the ground turkey and cook until browned, about 5–7 minutes. Stir in the spinach and cook until wilted.

        Combine Ingredients: In a large bowl, combine the cooked sweet potatoes, turkey mixture, black beans, cumin, smoked paprika, salt, black pepper, and Greek yogurt, if using. Mix until everything is evenly incorporated.

          Assemble the Casserole: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly, then sprinkle the mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with chopped cilantro before serving.
