Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

1 cup fresh spinach

Optional toppings: avocado slices, fresh cilantro, lime wedges

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Sprinkle with a little salt and pepper. Cook for about 10-12 minutes, stirring occasionally until they start to soften.

      Add Aromatics: Add the diced onion and bell pepper to the skillet. Sauté for an additional 5 minutes until the onion is translucent.
