1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), chopped

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh spinach or kale

1/4 cup chicken or vegetable broth (optional for added moisture)

Fresh cilantro or parsley, for garnish

Prepare the Ingredients: Start by peeling and dicing the sweet potatoes, chopping the bell pepper and red onion, and mincing the garlic. Set aside.

    Cook the Ground Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Season with salt, pepper, smoked paprika, cumin, and chili powder. Stir well to combine and let cook until the turkey is cooked through.

      Sauté the Vegetables: Push the turkey to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side, then add the diced sweet potatoes, red onion, and bell pepper. Stir everything together, then cover the skillet with a lid to allow the sweet potatoes to cook through, about 8-10 minutes. Stir occasionally to prevent sticking.
