1 lb ground turkey

2 medium sweet potatoes, diced

1 bell pepper, diced (any color)

1 small onion, diced

3 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder (adjust to taste)

Salt and pepper, to taste

2 tbsp olive oil

1 cup spinach or kale, chopped

Fresh parsley or cilantro for garnish (optional)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they begin to soften and caramelize.

    Add Aromatics: Push the sweet potatoes to one side of the skillet. In the cleared space, add another tablespoon of olive oil, then add the diced onion, bell pepper, and minced garlic. Sauté for about 3–4 minutes, until the onions are translucent and fragrant.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Sprinkle the smoked paprika, cumin, and chili powder over the meat. Cook until the turkey is browned and fully cooked through, about 5–7 minutes. Ensure it reaches an internal temperature of 165°F (75°C).

        Combine Ingredients: Once the turkey is cooked, stir in the cooked sweet potatoes, monitoring to ensure everything is well combined. Cook for another 2–3 minutes to heat through.
