Ground Turkey Teriyaki Stir Fry

1 lb ground turkey

2 tablespoons vegetable oil (divided)

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 cups broccoli florets

1 cup snap peas

¼ cup teriyaki sauce

2 tablespoons soy sauce

1 teaspoon sesame oil

Cooked rice or quinoa, for serving

Sesame seeds and green onions, for garnish

Instructions
 

Prepare the Ingredients: Before you begin cooking, gather and prepare all your ingredients. This makes the cooking process smoother.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Turkey: Add the ground turkey to the skillet. Use a spatula to break it apart as it cooks, until it’s browned and cooked through, about 5-7 minutes. Remove the turkey from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced onion and bell pepper, sautéing until they are softened, about 3-4 minutes.

          Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

            Vegetable Medley: Add the broccoli florets and snap peas, continuing to stir-fry for another 3-4 minutes until vegetables are tender-crisp.

              Combine and Sauce: Return the cooked turkey to the skillet. Pour in the teriyaki sauce, soy sauce, and sesame oil. Toss everything together and cook for another 2-3 minutes, allowing the sauce to coat the turkey and vegetables.

                Serve: Serve the stir fry over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions.
