Hawaiian Shoyu Chicken

4 chicken thighs (bone-in, skin-on)

1/2 cup soy sauce (preferably low sodium)

1/4 cup brown sugar

1/4 cup rice vinegar

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

1 green onion, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

1 tablespoon fresh cilantro, chopped (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes. Add the chicken thighs and ensure they are well-coated in the marinade. Cover and refrigerate for at least 1 hour, ideally overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare the Baking Dish: Place the marinated chicken thighs in a baking dish, skin-side up. Pour the leftover marinade over the chicken.

        Bake the Chicken: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.

          Baste for Flavor: Every 10 minutes during the last phase of baking, baste the chicken with the sauce from the baking dish to enhance flavor and moisture.

            Finish and Garnish: Once cooked, remove the chicken from the oven. Let it rest for a few minutes. Transfer to a serving platter and drizzle with the pan sauce. Top with sliced green onions, sesame seeds, and fresh cilantro if desired.
