1 lb baby carrots (or medium carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and black pepper, to taste

Optional: Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small saucepan, melt the butter over medium heat. Once melted, add the minced garlic and cook for about 1-2 minutes, stirring frequently until fragrant (be careful not to burn the garlic).

      Stir in the honey and thyme, mixing well until combined. Remove from heat.

        In a large bowl, toss the baby carrots with the honey garlic butter mixture, ensuring they are evenly coated.

          Spread the coated carrots onto a baking sheet in a single layer. Season them with salt and black pepper to taste.

            Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.

              Once done, remove from the oven and let cool slightly. If desired, garnish with freshly chopped parsley before serving.
