1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1/2 teaspoon vanilla extract

1/2 cup mini marshmallows

1/2 cup chocolate chips

1/2 cup crushed graham crackers

Extra graham cracker crumbs and chocolate syrup for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract. Stir until smooth.

      Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not over-mix; a few lumps are okay.

        Carefully fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the batter.

          Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

            Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges look set.

              Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.

                Remove from the skillet and keep warm. Repeat with the remaining batter.
