2 cups apple cider

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon ground ginger

1/4 cup unsalted butter, melted (for coating)

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions
 

Reduce the Cider: In a saucepan over medium heat, bring the apple cider to a boil. Reduce the heat to medium-low and let it simmer for about 15-20 minutes, or until it reduces to about 1 cup. Allow it to cool slightly.

    Mix the Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil. Add eggs and vanilla extract, mixing until smooth. Slowly pour in the reduced apple cider and stir to combine.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and ginger.

        Combine Wet and Dry Mixtures: Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix!

          Prepare the Donut Pan: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or melted butter.

            Fill the Pan: Spoon the batter into the donut pan, filling each cavity about 3/4 full. You can also use a piping bag for an easier and neater filling process.
