2 large eggs

1 cup buttermilk (or milk with 1 tbsp vinegar added)

1 tsp vanilla extract

2 medium-sized apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup brown sugar (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
