Ingredients

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¾ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

½ cup unsalted butter, melted and cooled

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

1 teaspoon vanilla extract

2 cups peeled and chopped apples (preferably Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Combine Sugars: In another bowl, whisk together the brown sugar, granulated sugar, and eggs until smooth. Slowly mix in the melted butter, buttermilk, and vanilla extract until well combined.

Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; it’s okay if there are a few lumps.

Add Apples and Nuts: Fold in the chopped apples and nuts (if using) gently, making sure they are evenly distributed throughout the batter.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your warm, fluffy apple cinnamon muffins as a delightful snack or breakfast treat!
