The roots of the grinder sandwich can be traced back to Italian-American culture, where it emerged as a beloved staple in delis and eateries across the northeastern United States. The term "grinder" is thought to have originated from the way the sandwich was prepared—grinding the meat and ingredients together before serving. Traditionally, this sandwich features layers of deli meats, cheeses, and fresh vegetables, all tucked inside a sub roll.

Ingredients

2 cups cooked chicken breast, shredded or diced

1 cup diced provolone cheese

1 cup diced salami

1 cup diced red bell pepper

1/2 cup chopped red onion

1/2 cup diced cucumber

1/4 cup chopped fresh parsley

1/4 cup mayonnaise

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1/2 teaspoon crushed red pepper flakes (optional)

Instructions

In a large mixing bowl, combine the shredded chicken, provolone cheese, salami, red bell pepper, red onion, cucumber, and parsley. Mix well to ensure an even distribution of all ingredients.

In a separate small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, oregano, salt, pepper, and crushed red pepper flakes (if using) until creamy and well combined.

Pour the dressing over the chicken salad mixture and toss gently until everything is evenly coated.

Taste and adjust the seasoning if needed, adding more salt, pepper, or vinegar according to your preference.

Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

Before serving, give the salad a good stir, and serve it over a bed of greens or on a toasted hoagie roll for a delectable sandwich.
