This Jamaican Shrimp Pasta recipe combines fettuccine with succulent shrimp, vibrant bell peppers, and a rich coconut milk sauce seasoned with Jamaican jerk spice. Ingredients
  

8 ounces of fettuccine pasta

1 pound of large shrimp, peeled and deveined

2 tablespoons of olive oil

1 medium onion, finely chopped

4 cloves of garlic, minced

1 bell pepper (red or yellow), sliced

1 cup of coconut milk

1 tablespoon of Jamaican jerk seasoning

1 teaspoon of lime zest

2 tablespoons of lime juice

Salt and black pepper to taste

2 tablespoons of fresh parsley, chopped (for garnish)

Optional: 1 small fresh Scotch bonnet pepper, chopped (for heat)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the shrimp and season with salt, black pepper, and half of the Jamaican jerk seasoning. Cook for about 2-3 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the chopped onion and bell pepper. Sauté for 4-5 minutes until the onion is translucent. Add the minced garlic and sauté for another minute until fragrant.

        Add Coconut Milk: Pour in the coconut milk, remaining jerk seasoning, lime zest, and lime juice. Stir well to combine and bring the mixture to a gentle simmer. Allow it to cook for about 5-7 minutes until slightly thickened.

          Combine Pasta and Shrimp: Return the cooked shrimp to the skillet and add the drained fettuccine. Toss everything together gently to ensure the pasta is well coated with the creamy sauce. If using, add the chopped Scotch bonnet pepper for an extra kick.
