Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup panko bread crumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 egg, beaten

Salt and pepper, to taste

Sesame seeds, for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon lemon juice

Salt, to taste

Sliced green onions, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large bowl, combine the ground beef, panko bread crumbs, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, gochujang, beaten egg, salt, and pepper. Mix until everything is well incorporated.

      Form the Meatballs: Using your hands, shape the mixture into small meatballs, about 1-inch in diameter, and place them on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes, or until they are cooked through and slightly caramelized on the outside.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, lemon juice, and a pinch of salt in a mixing bowl. Adjust seasoning to taste.

            Serve: Once the meatballs are done, remove them from the oven and let them rest for a few minutes. Transfer to a serving platter, sprinkle with sesame seeds and sliced green onions, and serve with the spicy mayo dip on the side.
