Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup panko breadcrumbs

1/4 cup green onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 teaspoon ginger, grated

1 teaspoon salt

1/2 teaspoon black pepper

1 egg, beaten

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1-2 tablespoons gochujang (adjust to taste)

1 tablespoon lime juice

1 teaspoon sesame oil

1 teaspoon honey

Optional: a sprinkle of red pepper flakes for extra heat

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Make the Meatball Mixture: In a large bowl, combine the ground meat, panko breadcrumbs, chopped green onions, minced garlic, fresh cilantro, soy sauce, sesame oil, gochujang, grated ginger, salt, pepper, and the beaten egg.

      Form the Meatballs: Use your hands to mix the ingredients until well combined. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes, or until they are cooked through and browned on the outside.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, whisk together the mayonnaise, gochujang, lime juice, sesame oil, and honey in a small bowl until smooth. Adjust the spice level by adding more gochujang if desired. Add red pepper flakes for extra heat if you like.

            Serve: Once the meatballs are done, remove them from the oven and let them cool for a couple of minutes. Serve warm with the spicy mayo dip on the side.
