8 oz whole grain pasta (fusilli or rotini work well)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup fresh basil leaves, packed

1/4 cup olive oil

Juice and zest of 2 lemons

1 tsp garlic powder

Salt and black pepper to taste

Optional: Vegan feta cheese or nutritional yeast for a cheesy flavor
