8 ounces linguine or spaghetti

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Juice and zest of 1 large lemon

2 cups fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/4 cup freshly grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and black pepper. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and red pepper flakes (if using) and cook for about 30 seconds until fragrant, making sure not to burn the garlic.

        Combine Ingredients: Add the lemon juice, zest, and reserved pasta water to the skillet, stirring to combine. Bring the mixture to a gentle simmer.

          Add Spinach and Tomatoes: Stir in the chopped spinach and halved cherry tomatoes. Cook for about 2-3 minutes until the spinach wilts and the tomatoes soften.

            Toss the Pasta and Shrimp: Return the cooked shrimp and drained pasta to the skillet. Toss everything together until well coated in the sauce. If it seems dry, add more reserved pasta water as needed.

              Finish and Serve: Remove from heat and stir in the grated Parmesan cheese. Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired. Garnish with chopped parsley before serving.
