8 large eggs

1 cup egg whites

1 cup cooked black beans, drained and rinsed

1 cup diced bell peppers (any colors)

1 cup diced onions

1 cup cooked lean turkey sausage or chicken sausage, chopped

1 cup shredded low-fat cheese (cheddar or pepper jack)

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

8 whole wheat tortillas (or low-carb tortillas)

Fresh cilantro for garnish (optional)

Salsa for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

    Prepare the Egg Mixture: In a large bowl, whisk together the eggs, egg whites, ground cumin, paprika, salt, and pepper until well combined.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of oil. Add the diced onions and bell peppers. Sauté for about 5-7 minutes, until they are soft and slightly caramelized. Stir in the cooked sausage and black beans, mixing well.

        Combine Ingredients: Spread the vegetable and sausage mixture evenly on the prepared baking sheet. Pour the egg mixture over the top, ensuring even coverage. Sprinkle with shredded cheese.
