Ingredients

2 boneless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

8 oz fettuccine pasta

Fresh basil, for garnish

Freshly ground black pepper, to taste

Instructions

Prepare the Chicken: Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Sauté the Aromatics: In the same skillet, add minced garlic, Italian herbs, and red pepper flakes (if using). Sauté for 1-2 minutes, until fragrant.

Add the Tomatoes: Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.

Make the Cream Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.

Incorporate Parmesan: Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Season with additional salt and freshly ground black pepper if needed.

Cook the Pasta: In a separate pot, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

Combine Everything: Slice the cooked chicken and add it back into the skillet with the creamy sauce. Toss in the cooked fettuccine and stir gently to coat the pasta with the sauce.

Garnish & Serve: Serve immediately, garnished with fresh basil and an extra sprinkle of Parmesan on top if desired.
