Ingredients

2 boneless, skinless chicken breasts

8 ounces of penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and sear them for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet, cover, and keep warm.

Cook the Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then add the cherry tomatoes and cook until they soften, about 3-4 minutes.

Make the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, dried basil, oregano, and red pepper flakes if using. Cook for about 5-7 minutes, allowing the sauce to thicken slightly.

Combine: Add the cooked penne pasta to the sauce, tossing to coat. Grate in the Parmesan cheese, stirring until melted and well combined.

Slice and Serve: Slice the seared chicken and place it on top of the pasta. Garnish with fresh basil leaves and additional Parmesan cheese if desired.

Enjoy: Serve this flavorful dish immediately, and prepare to be proposed to!
