Ingredients

2 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

1 cup coconut milk

2 tablespoons soy sauce

1 tablespoon miso paste

2 teaspoons honey

1 tablespoon fresh ginger, grated

4 ounces ramen noodles

2 cups fresh spinach

1/2 cup sliced mushrooms

2 green onions, sliced

Fresh cilantro, for garnish

Salt and pepper, to taste

Lime wedges, for serving

Instructions

Sauté Chicken: In a large skillet over medium heat, add olive oil. Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes per side, or until they are golden brown and cooked through. Remove from skillet and allow to rest.

Prepare Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant. Pour in the chicken broth and add coconut milk, soy sauce, miso paste, honey, and grated ginger. Stir until the miso paste is fully dissolved, and let it simmer for about 5 minutes.

Cook Ramen: In a pot of boiling water, cook the ramen noodles according to package instructions until al dente. Drain and set aside.

Add Vegetables: To the sauce mixture, add the sliced mushrooms and cooked ramen noodles. Stir in the fresh spinach and cook for an additional 2-3 minutes, allowing the spinach to wilt.

Slice Chicken: While the noodles and vegetables are cooking, slice the rested chicken breasts into strips.

Combine and Serve: Divide the ramen and vegetable mixture into bowls, topping each with sliced chicken. Garnish with green onions and fresh cilantro. Serve with lime wedges on the side for a zesty finish.
