Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups cooked pasta (penne or fusilli)

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/2 cup red bell pepper, diced

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large pot, bring salted water to a boil and cook the pasta according to package directions. Drain and rinse under cold water to cool.

    In a large mixing bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, red bell pepper, and parsley.

      In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.

        Pour the dressing over the pasta salad and toss gently to combine, ensuring all ingredients are well coated.

          Refrigerate the salad for at least 30 minutes to allow the flavors to meld.

            Serve chilled or at room temperature, garnished with additional parsley if desired.
