Ingredients
  

4 salmon fillets (skin-on, about 6 oz each)

1 cup cherry tomatoes, halved

1 cup Kalamata olives, pitted and chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

2 tablespoons fresh dill, chopped

2 tablespoons olive oil

1 lemon (zested and juiced)

4 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Lemon wedges for serving

Instructions
 

Prep the Oven: Preheat your oven to 400°F (200°C).

    Make the Marinade: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Mix well.

      Season the Salmon: Place the salmon fillets in a baking dish. Pour the marinade over the salmon, making sure to coat them evenly. Allow the salmon to marinate for about 15-20 minutes.

        Prepare the Topping: While the salmon is marinating, mix the cherry tomatoes, Kalamata olives, crumbled feta cheese, parsley, and dill in a separate bowl. Season with a pinch of salt and pepper.

          Assemble: Once the salmon has marinated, remove it from the dish and place the tomato-olive mixture on top of each fillet, pressing down gently to secure it.

            Bake: Return the salmon to the oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Serve: Once cooked, remove from the oven and let it rest for a couple of minutes. Serve the salmon with lemon wedges on the side, garnished with extra herbs if desired.
