Ingredients

1 can (20 oz) crushed pineapple, undrained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 cup crushed graham crackers

½ cup unsweetened coconut flakes

Fresh pineapple chunks and mint leaves for garnish

Instructions

Prepare the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and continue mixing until well combined.

Add the Pineapple: Gently fold the undrained crushed pineapple into the cream cheese mixture. Ensure it's evenly mixed to infuse the tropical flavor.

Whip the Cream: In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. This will give your dessert a light and airy texture.

Combine: Carefully fold the whipped cream into the pineapple and cream cheese mixture. The aim is to keep the mixture light and fluffy.

Layer the Dessert: In a square or rectangular dish, start by laying down a layer of crushed graham crackers. Pour half of the pineapple mixture over the crackers, smoothing it out.

Add Coconut Flakes: Sprinkle half of the unsweetened coconut flakes over the pineapple layer.

Repeat the Layers: Add another layer of crushed graham crackers, followed by the remaining pineapple mixture, and finally top with the remaining coconut flakes.

Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to firm up.

Serve: Before serving, garnish with fresh pineapple chunks and mint leaves for a lovely presentation. Scoop out and enjoy your refreshing, no-bake dessert!
