One-Pan Honey BBQ Chicken Rice

1.5 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 cup BBQ sauce (your favorite brand)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, sliced (any color)

1 cup corn (canned or frozen)

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and smoked paprika.

    Sauté the Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 2-3 minutes.

      Add the Chicken: Push the onions and garlic to the side of the pan, then add the chicken thighs. Sear them for 5-7 minutes on each side or until they are golden brown.

        Combine Ingredients: Once the chicken is browned, pour in the BBQ sauce, chicken broth, and add the rice, sliced bell pepper, and corn. Stir everything gently to combine.

          Cook the Rice: Bring the mixture to a boil, then reduce the heat to low and cover the pan. Let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to ensure the rice doesn’t stick to the bottom.

            Check for Doneness: Ensure the chicken is cooked through (internal temperature should reach 165°F). If needed, let it simmer a few more minutes.
