1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

4 cups low-sodium chicken broth

1 cup heavy cream

Zest and juice of 1 large lemon

1 lb potato gnocchi (store-bought or homemade)

1 cup baby spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces, season with salt, pepper, oregano, and thyme. Cook for 6-8 minutes until browned and cooked through. Remove the chicken from the pot and set aside.
