One Skillet Salmon with Lemon Orzo

Crispy salmon fillets are paired with a creamy orzo cooked in savory broth, tossed with fresh spinach and juicy cherry tomatoes. 4 (6 oz) salmon fillets, skin-on

Salt and black pepper, to taste

2 tablespoons olive oil, divided

1 cup uncooked orzo pasta

3 cups vegetable or chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

Juice and zest of 1 lemon

2 cups spinach leaves

¼ cup fresh parsley, chopped

½ teaspoon red pepper flakes (optional)

Grated Parmesan cheese, for serving

Prepare the Salmon: Season the salmon fillets with salt and black pepper on both sides.

    Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down, and cook for about 4-5 minutes, until the skin is crispy. Carefully flip and cook for another 3-4 minutes. Remove the salmon from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion for 2-3 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

        Cook the Orzo: Pour in the uncooked orzo and stir for a minute to toast it slightly. Gradually add in the broth, stirring occasionally. Bring to a boil, then reduce to a simmer. Cook for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid.

          Add Vegetables: Stir in the cherry tomatoes, lemon juice, lemon zest, and spinach. Cook for another 2-3 minutes, until the spinach wilts and the tomatoes soften slightly.

            Combine Ingredients: Gently fold the seared salmon back into the skillet. If using, sprinkle the red pepper flakes over the top. Let everything heat through for another minute.

              Garnish and Serve: Remove from heat and sprinkle with fresh parsley and grated Parmesan cheese. Serve warm and enjoy the delightful combination of flavors!
